1 French Loaf
Sunripe Robertson Tomatoes (5-10)
Olive oil
2 Red onions, diced
Fresh Basil
Cheddar and feta cheese

Slice the French loaf in 1cm slices and sprinkle lightly with olive oil and toast under the griller until lightly brown.
Blanch the tomatoes in boiling water and remove the skins.
Chop the peeled tomatoes in rough chunks.
Glaze the onions with olive oil and add the tomatoes, flavour with salt and pepper.
Dish a tablespoon of tomato and onion salsa onto each slice of toasted bread.
Top with the cheddar and feta cheese and grill until the cheese becomes golden brown and bubbly.
Garnish with a fresh basil leaf and serve immediately.
