Ingredients: 
15 – 20 medium size ripe lemons
2 kg sugar
1,5 litres boiling water
The zest of 5 lemons
3 tsp cream of tartar
3 tsp bicarbonate of soda
3 tsp citric acid

Method:
Squeeze 1 litre of juice from the lemons.
Stir the sugar in boiling water until it dissolves.
Add lemon juice and the lemon zest.
Add the cream of tartar, bicarbonate of soda and citric acid and let it rest for 24 hours.
Bottle and enjoy with ice water, soda water or gin! !
